Recipe Swap- Best Thanksgiving Side Dishes

The best recipes tend to be "a pinch of this and a dash of that." My personal favorite among the Thanksgiving recipes happens to be on a cherished water-stained yellow Post-it note of chicken scrawls I wrote while on the phone with my mom 13 years ago on my first married Thanksgiving. My mother's sweet potatoes (yams) are all the rage in our family and once my husband tried them, he made sure I called Mom on Thanksgiving to get the recipe. This year I'm in charge of sweet potatoes at the preschool Thanksgiving dinner and will bring them along to Andrew's Aunt Donna's gathering in Virginia Thanksgiving Day. Bette Ann's (Brittney's Mom) Famous Sweet Potatoes


*Melt in a saucepan a 1/2 Stick of Margarine
*Add 1/3 C. Orange Juice and 3/4 C. Brown Sugar

(Cook above ingredients until melted together and slight boil)

*In a small bowl combine 2 1/2 Tablespoons of Cornstarch and water until smooth. Add this mixture to the other ingredients in the saucepan to thicken sauce.

*Drain one large can of sweet potatoes (or yams) and put in casserole dish. Cover the sweet potatoes with sauce and cook at 350 degrees until bubbly (approximately 20 minutes.) Enjoy!!

    Thanksgiving Cranberry Cobbler

    2 cups whole cranberries
    1/2 cup sugar
    1/2 cup pecans, finely chopped
    1/2 cup crushed pineapple with juice
    2 tablespoons grated orange zest

    Batter Ingredients:
    1/2 cup sugar
    3 tablespoons melted butter
    Juice from half a medium orange, freshly squeezed and strained
    1 beaten egg, or two egg whites
    1/4 cup plain flour

    Directions:
    Preheat oven to 350 degrees. Spritz a large pie pan or 8x8 baking dish with non-stick cooking spray. Add cranberries, sugar, chopped pecans, pineapple, and orange zest. Mix together in baking dish. In a small bowl mix all batter ingredients together and pour over cranberry mixture. Bake for 45 minutes. Dish will be hot and bubbly when finished. Serve hot or cold. Excellent either as a side dish or served chilled for dessert.

  2. Mom's Southern Squash

    8 Medium or Large Yellow Squash
    1 Large onion
    Salt
    4 Tbs Butter (or MORE. The more the better!)
    1 Tbs Olive Oil
    Salt
    Black pepper


    --Slice the squash into 1/2 inch thick slices
    --Slice the onion
    --Heat the oil and butter until sizzling in a large pan or deep sided pot
    --Sautee the onion until softened
    --Add the squash and stir to coat
    --Continue cooking, stirring occasionally, until the squash has softened significantly
    --Ensure it is sufficiently moist....add more oil or water if necessary
    --Add salt and pepper to taste.
